Pasta Sauce with Garlic Scapes
This rich tomato sauce gets a bold kick from garlic scapes — perfect for pasta night.

Pasta Sauce with Garlic Scapes
Ingredients:
- 1 Medium Onion, chopped
- ~5 Garlic Scapes, chopped to ½ inch
- ½ lb Ground Meat or 4 oz Mushrooms
- 24 oz Crushed Tomatoes
- 1 tbsp Tomato Paste
- 1 tbsp Balsamic Vinegar
- 1 tsp each: Italian Seasoning, Oregano, Salt, Pepper
- ⅛ tsp Cayenne Pepper (optional)
Directions:
- Sauté onion and garlic scapes until soft.
- Add meat or mushrooms; cook until browned.
- Stir in tomatoes, paste, vinegar, and seasonings.
- Simmer for 20 minutes, adjust seasoning to taste.
- Serve hot over pasta. Enjoy!

Garlic Scape Pesto
Ingredients:
- roughly 20 garlic scapes
- 2 Tablespoons extra virgin olive oil
- 4 Tablespoons parmesan cheese
- ½ teaspoon ground black pepper (more or less for taste)
- ¾ teaspoon salt (more or less for taste)
- 1 teaspoon lemon juice (optional)
Directions:
- Chop the scapes for easy processing, and place them in a food processor
- Add other ingredients
- Blend/process until fairly smooth, but not quite creamy
- Taste and add more oil, salt, or pepper to your preferred taste.
